Grading

 

Olive oil comes in different grades and qualities:

Extra Virgin olive oil comes from virgin oil production only, is directly extracted from the olives via cold extraction methods and solely via mechanical means, and contains no more than 0.8% naturally-produced acidity. It is judged to have a superior taste. It must not have undergone any treatment other than washing, decanting (at a maximum temperature of 27º C), centrifuging and filtration. Extra Virgin olive oil offers the highest level of nutritional value amongst all olive oil categories. Extra Virgin olive oil is excellent on salads, in soups and stews and for all types of dippings, dressings and condiments.

Virgin olive oil comes from virgin oil production only, is directly extracted from olives via cold extraction methods and solely via mechanical means, and contains no more than 2% naturally-produced acidity. It is judged to have an excellent taste. It must not have undergone any treatment other than washing, decanting, centrifuging and filtration. Virgin olive oil offers the second highest level of nutritional value amongst all olive oil categories. Virgin olive oil is used on salads, soups and in dressings, and is also used for heat-inherent cooking method. It is also very popular for non food uses such as body moisturizer and hair cleansing, (see section Using Olive oil)

Olive oil sometimes referred to as either Pure or Fine is refined olive oil production derived by chemical treatment, blended with virgin oil in order to increase the final quality and taste. Olivema's Olive Oil contains 30% of Virgin Olive oil.  Its acidity level which is both chemically derived and naturally-produced, can reach up to 1%. It commonly lacks a strong flavour but still offers nutritional value, although less than the Extra Virgin and Virgin olive oils. This category of olive oil is usually used for heat-intensive cooking methods, including roasting, searing, stir-frying, braising, marinating and sautéing.

Olive Pomace oil is a refined oil which is extracted from the pomace (the remaining product after the first treatment of olives for extra virgin olive oil and virgin olive oil extraction) which is blended with virgin olive oil in order to increase the final quality and taste. Olivema's Olive Pomace oil contains 10% of Virgin Olive oil.  Its acidity level which is chemically derived can reach up to 1%. Its flavour and aroma are very mild and nutritional value exists though significantly lower than the extra virgin and virgin categories. Pomace Olive oil is almost exclusively used for heat-intensive cooking methods including roasting, searing, stir-frying, braising, marinating and sautéing. It is also popular within the restaurant trade.
